RED, YELLOW & ORANGE BELL PEPPER

Unlike the fruits of other varieties of Capsicum (peppers, which are hot), the peppers have a mild flavor, meaty body, are usually large and have between a square and rectangular characteristic shape (while the traditional chiles tend to take the form of pod).

The peppers can be eaten green or ripe, the latter may be red, yellow or orange, depending on the variety. There is also a white variety as well as a rare selection which is purple, blue or brown.

Spicy or sweet, depending on the variety to which they belong.

Size and weight

Size varies between 50mm and 110 mm, weighing 120 grams.

Color

The most popular are the red and green Bell Peppers, but you can also find them in yellow and orange.

Flavor

The taste of a pepper is mainly sweet and is often used in salads.

 
 
 

NUTRITION

 

The main component of the Bell Pepper, is water, followed by carbohydrates, which makes it a vegetable with a low caloric intake. It’s a great source of fiber and, like the rest of vegetables, the protein content is very low and is practically fat free.

In terms of vitamin content, Bell Peppers are very rich in vitamin C, especially the red ones. In fact, they contain more than twice found in fruits such as oranges or strawberries.

They are a good source of carotenoids, among which is the capsanthin, antioxidant pigment that gives the characteristic red color to some peppers.

Also noteworthy is the content of provitamin A (beta carotene and cryptoxanthin) that the body converts to vitamin A as needed, folate and vitamin E. Also found are the B vitamins including B6, B3, B2 and B1, although in a fewer quantity. It’s content in those vitamins, C and E, along with carotenoids, is what makes the pepper into a major source of antioxidants. These are substances that care for our health.

Besides being a powerful antioxidant, vitamin C, aids in collagen formation, red blood cells, bones and teeth, while improving the absorption of iron from food and increases infection resistance.

Vitamin A is essential for vision, good skin, hair, mucous membranes, bones and a proper functioning immune system.

Folates are involved in the production of red and white cells in the synthesis of genetic material and the formation of antibodies of the immune system.

Among the minerals, the presence of potassium is important. Also present, although in a smaller proportion are, magnesium, phosphorus and calcium. Calcium is not assimilated in peppers as it is in dairy or other foods that are considered very rich source of this mineral.

Potassium is necessary for nerve impulse transmission, muscle activity and regulates the water balance inside and outside the cell.

Magnesium is related to the bowel, nerves and muscle function. It is a component of bones and teeth, enhances immunity and has a mild laxative effect.

Phosphorus plays an important role in the bone and teeth formation, as well as magnesium and calcium.
